Just asking, security for employee

for staff - which security use frequently like product, sale, ...how to control/mange staff change notes, open cash drawer...
for admin - how to know staff does the job good

the end of the day, where to check report everything goes smoothly

You can give staff, waiters and cashiers their own password levels (Settings / Employees).  And give them a job restriction, like a cashiers and managers are the only ones that can cash out a sale.
In the Settings / Security you can control many of the functions that a password level can perform.  Such as opening the Cash drawer.
"Does a good job" - That's a little vague.  You should check the z-out reports.  Look at the Activity log for things like changing a tickets after the sale or opening the cash drawer.  Also, use the reports for Voids, Returns, Discounts to see how often that happens.

Press the Finish button.
Select the payment method.

I don't think you need to know this.  Take your time and ask the questions fully.  So, we can give you a helpful answer.

cash out = cash back, is that right?

Not really.  Cash Out means different things.
To do a Pay Out add that function to the sales screen using the Tools / Arrange Function Buttons.
You can also print a Payout receipt.  Turn this on in the Settings / General.

What is different between cash out, cask back and pay out? is that correct cash out = pay out ?

I've heard Cash Out being used for z-out and finishing a sale.
Cash Back is used to give the customer cash back from a credit card or check purchase.
Pay Out means to take cash out of the register to pay someone.
