Use the Discontinued option so these items will not show up in the sales screen. You can do a group of items at once using the Change menu in the Product Control window.
Or, you can also do a "Send to Shortage" in the Products / Adjust Stock menu in the Sales screen. This will remove them from inventory and account for them as lost in the Shortage report.
